TIPS FOR COOKING WITH EGGS

Afraid of making Eggs Benedict when you have company?  Here are some tips from Guest Chefs at the Inn.
 
Eliminate all the variables.  If your eggs are right out of the fridge, put them in a bath of hot tap water for 5 minutes - remove from water.  Now your timing will correspond with any tricky recipes.

Want some more flavor in the poached eggs?  Sallie Cwik seasons her poaching water with fresh herbs and the eggs are infused while cooking.
 
Want more wiggle room while you are plating your eggs?  Let your poaching water come to a light movement, break each egg into a small glass dish (or measuring cup) immerse the glass into the water then let the egg slip out slowly.  The trick is for the egg to be as quiet as possible.  When all your eggs are in the water, cover completely and turn off the flame.  Set the timer for three minutes (leave the lid on).  Have a glass pie plate filled with room temperature water.  When the timer goes off, transfer the eggs to the holding water.  This will stop the cooking and give you time to get the english muffins and canadian bacon on plates.  Don't worry about egg temperature the warm hollandaise makes it just right.  Try a little dill as a garnish and don't forget the white pepper.
